Animal free dairy start-up Perfect Day has launched a limited-edition animal-free ice cream made with its flora-based protein.

Perfect day produces casein and whey, the proteins found in cow’s milk, by fermentation in microflora. The company says their dairy protein works as a base for dairy foods, providing the taste and texture of dairy.

“Our flora-based protein will enable all kinds of dairy products to be made without cows. Long term, in order to achieve serious impact, we’ll be working with some of the largest dairy and food companies in the world to bring flora-based products to tables across the globe.”

In November 2018 Perfect Day entered into a Joint Development Agreement with Archer Daniels Midland (ADM), to scale up the production of dairy proteins using fermentation in microflora.
